Domaine des Geais Cotes du Marmandais Rouge

Cotes du Marmandais, France (just south of Bordeaux) 

Varietals: 56% Cabernet Sauvignon, 24% Syrah, 15% Abouriou, 5% Merlot 

Organic, Short maceration (one week), depending on the variety, at variable temperatures from 10 to 12°C. After the run off, the temperature is elevated until 20°c in order to start the fermenting process. We keep the temperature at 24°c during the fermentation to create the best conditions for the natural yeasts.
